A Study on the Method of Reducing Food Loss in Japanese Food Service Industry

(in English) The purpose of this study is to examine the method of reducing food loss in food service industry, which has the highest rate of food loss in the food supply chain in Japan. In particular, we focuse on a doggie bag made of bamboo fiber reinforced plastics (BFRP). We also consider the possibility of reducing leftover and cancelled products, which account for half of all food loss in the food service industry.
